Zambian barista champion Francis Njobvu gave a warm presentation and created a friendly, hospitable environment for the judges. One gets the feeling that he really wishes he could spend more time interacting with judges he’s serving, like when he tells them, “don’t feel neglected, I’m going to prepare your espressos.”

For his signature beverage, Francis first soaked cinnamon sticks in milk and then added some hot water to a jam made from the mucilage of coffee. After pulling four shots of espresso, he filtered the cinnamon out of the milk and steamed it, combined all the components together and personally stirred the drinks for the judges at the table for them to enjoy.
